The Weekend Briefing!

What a weekend! Friday started off with Knox wanting to go on a run with me. I am very lucky. If you are around Knox for any amount of time, you realize he is the best.

And then I had the treat of going to the Ballerina Farm! I’d never been to Kamas, Utah, and the drive there was gorgeous. Two quick highlights:

We made our own butter, and it was quite an arm workout shaking the cream for 30 minutes.

And we finished the afternoon off with soft-serve ice cream topped with melted butter (which hardened quickly) and salt in a sourdough waffle cone. Never have I thought of having ice cream with butter as a topping, but it was spectacular.

Curly asked if she could make dinner for us on Friday night. She loves to cook, and we love to eat. It was one of the best meals I’ve ever had. Knox had a friend over for dinner, too, and we all sat there and talked for so long. Tikka Masala recipe! Her salad was made of spinach, thinly sliced apples, candied pecans, red onions, carrots, and this dressing.

Saturday was Andrew’s birthday! We started with gifts and cards… He got his dream watch. I’ll have him write a review after he tests it out for a while.

And then he had a recovery ride scheduled that he wanted to do together. His recovery ride = my all out.

Andrew is my secret weapon on the trails… I haven’t come this close to this trail segment PR that I do all of the time in over 3 years until yesterday. I also got two new PRs on different parts of the trail while trying to keep up with him. His race is next weekend, and I cannot WAIT to see how he does. He is fitter than ever on the bike. There is a heat wave coming in for the race, and it is supposed to be a high of 93F° but that isn’t going to stop him.

Andrew’s parents came down, and Andrew requested Bowls Superfood.

Followed by a Couples Massage (his birthday felt like it was my birthday).

We finished the day at one of his favorite restaurants for dinner (7 Brothers) and with his favorite pie (raspberry cream cheese at Kneaders) for dessert. Brooke was with her dad over the weekend, and so they met us for dinner and dessert, too!

Beck worked hard on Sunday to make it up a big hill at the park without stopping. He can make it about 65% of the way and is already asking when we will go back to work on it today.

Crispy Sesame Salmon Bites was for dinner on Sunday and is currently on the weekly dinner rotation because it is so good.
