Tournament Weekend, Progressive Overload & A Salad Worth Talking About

We are finally home. After 13 days of traveling, I’ve never been happier to be home. Let’s catch up on the weekend and talk about one of the best meals I have made in a very long time.

I got in two runs while I was in St. George. The first one was 10 miles @ 7:44 pace, and I decided to throw in a fast mile in the middle @ 5:56.

The next morning, I ran 8 miles @ 8:22 pace and couldn’t get over the red rocks contrasted against the white snow. I’ve never seen this much snow here.

I also got in a day of lifting and I’m shocking myself with some of the weights I’m able to use now… CGX app for the win. The progressive overload is working.

Some games during her tournament were freazing…

Other games weren’t as cold.

Her night game was my favorite.

Andrew takes pickleball very seriously. He did not want to lose against our friend and worked very hard on that court.

Before the tournament, a friend offered families to stay at an Airbnb together, where she gets a great deal… Each family only had to pay $250 for 4 nights. It felt like its own resort…

The kids lived in the pool (it was heated)!

There were outside games.

And the roof had a firepit on the roof to make s’mores.

We did a lot of cooking at the Airbnb for our meals, but had to make it over to Pizza Factory. I still use my cucumber trick all of these years later to make the plate for my salad bar bigger.

Each night, we all stayed up until at least midnight. Morning me always regretted it, but it was fun as it was happening.

We knew there wasn’t one fresh thing waiting for us at home, so we stopped at Costco at the end of our road trip.

I’ve seen this sweet chili chicken crispy rice salad all over the place and had to try it.

It was perfect. 10/10. Could eat this every day.

Now, to complete 10 loads of laundry, clean the house, take our dogs on a very long walk, and help these kids catch up on school!
